I have a set of Professional kitchen knives. I gave them to the local butcher to sharpen. Can you help?
The butcher has put a slight 'V' on the cutting edge which has reduced their performance.

a rule of thumb is never let anybody touch let alone sharpen your knifes ..
depending on what you knifes are made out of ie .. ceramic or metal
